Lemon Pudding

Last night was the last of my church “Dinners for Eight” meetings for this cycle. We have officially been to every member’s house. This time we were at a nice condo in the northeast corner of the Baltimore area.

I was to bring dessert. I decided to make Grandma Hummel’s Famous Lemon Pudding. It’s this awesome pudding with kind of a cake crust on top. Absolutely incredible. When our mom would make it when we were kids, we’d treasure the portion we got. It was easily our favorite. …or were the Christmas cookies our favorite? …or the Christmas candy? Mmmm… It was all good.

It used to take a long time to make, but thanks to the wonders of modern technology (my Kitchen Aid mixer), it doesn’t take as long.

It seems like each time I make it, it tastes a little different. This batch was particularly lemony. Almost too strong. If I remember, next time I’ll use a little less lemon juice.

BEFORE:
Creaming butter and sugar together by hand would really be tiring! Thank you, mixer.

AFTER:
Mmmm... Full of lemony goodness.

I almost always make a double batch, so that’s what measurements I’ll give. Here’s the recipe:

8 Tbs. butter
3 c. sugar
4 lemons, zested and juiced
4 eggs
2 c. milk
8 Tbs. flour

Cream butter. Add sugar gradually. Cream together. Add well-beatn egg yolks, flour, lemon juice and zest. Mix thouroughly. Add milk and fold in stiffly beaten egg whites. Pour into bowls or cups. Set in pan of hot water and bake at 325 for about 45 minutes.

    Yay for Kitchen Aid mixers!! I agree, they are the best invention of the modern age.

    And yay for Nutella! That is the second best invention of the modern age.

    Now, all that being said, is this a recipe you can share? It looks delish!

      I’ll second that Nutella rave and raise you that other stuff I discovered on a tour of Europe (where I first had Nutella as a BREAKFAST condiment – best idea since Cheerios!), the name of which escapes me now (the other stuff I discovered on the tour, that is … not the name of Euopre itself … you sillies!)

      So who has Nutella recipes to pass around?? Not that Nutella needs any improvement at ALL, you understand. Too bad my dear husband has nut allergies – I am always forced to sacrifice myself and consumer the entire jar whenever one is in the house…for a few hours…max.

    Um, you forgot the quarter for scale. Just how big are those dishes? And how did those dinner people like it? And how did YOU get a beautiful mixer? I’m envious.

      Forget the quarter, how many points? And, it must not be placebo you’re taking. Real drugs always make food taste different. As do other medicinal treatments….or so I’m told.

    Mmmmmmmm…… I like that pudding. Of course, I’d like it even more if it was made in a very shallow dish, so it was almost all crust and just a little bit of pudding. Did you get that order, garcon? I’ll wait for my portion.

    Ditto to everything above!

    How did you get that great mixer? Did the dinner people like it? Did they each eat a whole bowl? Would Grandma Hummel haunt you if you shared the recipe? What were you making with Old Bay?

      The lemon was too strong for a few of them. Some of them really liked it. I messed up and only brought six bowls for nine people. The hostess had some smaller dishes we scooped them in to. The Old Bay is still on the counter from my fondue night a month ago. Apparently, it takes too much energy for me to lift it up into the cabinet directly above there where I keep spices.

    I got my super-awesome mixer when my friends’ house caught on fire. The fire was in the basement under their kitchen, and the insurance guy called their whole kitchen a loss. It just had some soot on it. They bought all new stuff. I could keep any soot-covered item I wanted. I got a blender, toaster, bread machine, mixer, and George Foreman grill. Thank you, Mike and Sarah.
    (I should light my friends’ houses on fire more often.)

    The size of the bowls can sort of be determined by the pictures above.

    In the first picture, they are to the left of the mixer. The bowls to the right of the mixer are regular old cereal size bowls. Plus, there is a 3×5 card sitting on the counter next to them.

    In the second picture, the pan they’re sitting on is a standard size cookie sheet.

    So, they’re larger than a 3×5 card, but smaller than a cookie sheet. Does that help?

    No. Here in Bradaptationland we can only visualize size based on quarters.
