Eating Rhubarb

I have been growing rhubarb in my garden for a few years now. I grow it because it has huge, ruffled leaves. But the leaf stalks are edible, and I’ve wondered if what grows in my yard would be tasty. I remembered a recipe my mom made that uses rhubarb and soda crackers. I got the recipe from her yesterday.

First I cut some healthy stalks:

Then I assembled the ingredients. There are only four.
Crushing the crackers was fun.

After cooking the recipe, I ate it. Mmm…
Warm, with ice cream.

The rhubarb tasted sort of like green apples with an exotic twist. It was like eating some mysterious foreign delicacy. And I had grown it in my own back yard! 🙂

Here’s the recipe:
2.5 cups rhubarb
2 beaten eggs
1 cup (plus a little extra) sugar
30 crushed soda crackers

Combine, bake in greased pan at 350 degrees for 35 minutes.

    I am oozing with jealousy. You’re growing dessert in your yard! With your garlic, onion and potatoes you’ve got a killer side dish coming next!

    Are soda crackers saltines?

      Oooh, so rhubarb is a dessert. I assumed it was a vegetable & I was thinking–Geez, maybe I too would eat more vegetables if I topped them with some ice cream!

      That looks quite tasty!! Could I substitute hosta stems for the rhubarb?

    I didn’t know it was such an early crop. It’s still cold here and I don’t like it.
