An Apple a Day

I’ve been thinking about how my lunch has evolved over time. When I started teaching, I actually packed a lunch, and it had a variety of foods. After stopping that, I tried all kinds of lunches: frozen dinners and pot pies, soup, loaves of bread and something to go on it, crackers and cheese, crackers and tuna, Carnation Instant Breakfast Drink, Lunchables, leftovers…

On and off, I’ve been pretty good about bringing some kind of fruit or vegetable. They’re a hassle, because I have to buy them weekly if I don’t want them to be rotten. And they’re more expensive than just getting a box of granola bars. But they’re good for me. And when it comes down to it, I like to eat some plant material every once in a while.

Lately, I’ve been getting apples. My normal talent at picking mealy ones has been on vacation or something, because I’m finding some pretty crunchy apples. I’m glad. I wouldn’t have said apples are my favorite fruit, but they sure hit the spot when I’m hungry. I’ve even tried that at home… Hungry? Want to eat half a box of cookies? Have an apple. …and then eat half a box of cookies.

I think it's a Fuji.

Are you just having an apple for lunch, or is there more to go with it? I hope there’s more, because one apple wouldn’t be enough food to last the day, even if it the apple looked like this.

I’ve always wanted to pack lunches like bento boxes, but a close second would be to use one of these. Who’s kidding who, though? I’d eat a box of granola bars, too.

My main dish is tuna and crackers this week, but I’m unhappy with it. I can’t find tuna in cans any more. They’re all pouches, which are hard to eat out of.

Weird. Should we be mailing tuna in cans out to you? Because cans are still the norm here in Nebraska.

      • Peggy says:

Are you sure you’re looking in the right place? At my food store the pouches of tuna are kept in a different place than the canned tuna.

        • Brad says:

I was in the “canned meat” aisle. I looked in two different grocery stores. I found some off-brand tuna in cans, and I found tuna in oil (ewww…), but I didn’t find regular tuna in regular water in a regular can. All pouches.

          • Peggy says:

Well, if you need or want some….just give me your order & I’ll get you some the next time I go.

      • Lauren says:

Do you still have a fish tank? Seems to me you could be eating locally-sourced fish….

I love apples! They make a great desk decoration……well, for awhile anyway.

HA! That’s my philosophy alright: follow the healthy food with the junque you were going to eat all along to make you think you’ve made a better choice. Way to go, kiddo. Keep up the good work and that cholesterol should be into the negative numbers any day now…

…and we won’t even bring up the benefit of “regularity”, will we?
