A Treat

At school, the staff draws each other’s names and brings in a treat on the birthday of the person we draw. My person is the pastor. His birthday was Sunday, and he was off yesterday, so today I’m bringing his treat.

I asked his eighth grade son what kind of dessert he likes. He didn’t really know. I was surprised, because I’d easily be able to answer that question about my dad – he likes banana cream pie, lemon meringue pie, peach pie…. he likes pie. Eventually, the eighth grader said he thought his dad liked Ben and Jerry’s ice cream. I asked what flavor. He thought maybe raspberry something.

I thought this might be a great opportunity for me to make that simple recipe that uses a box cake and a pint of ice cream. I got devil’s food cake, and white chocolate raspberry ice cream. I also got raspberry jam to melt and pour over the finished cake. And some raspberry chocolate chunk ice cream just in case.

I hope the jam doesn't have a weird texture.

I hope that boy remembered correctly. What if the pastor hates raspberry? Oh well, more for me…

Chocolate Ice Cream Cake (but not like you think)
with thanks to Connie Aubuchon (and to Omnomicon)
1 box chocolate cake mix (or any other flavour)
1 pint chocolate ice cream, softened (again, any other flavour)
3 eggs
1 c water

Preheat oven to 350o. Grease a tube or bundt pan, then dust with cocoa powder.

Beat all ingredients together for 4 minutes, pour into pan and bake 45 minutes. Serve with a dusting of confectioner’s sugar, a thin icing, whipped cream or the frosting of your choice.

      It tasted pretty good. I really liked the raspberry jam on the cake. The jam was kind of tart, the cake was kind of sweet. Good combination.
