Yesterday in Life Skills class, we talked about cheese. I showed Alton Brown on an episode of Good Eats talking all about cheeses. After the video, I had them taste various cheeses. I think the most exciting thing about the whole class for some of them was that they had never seen oyster crackers. They were more excited about them than the cheese. Maybe I should have a whole class period dedicated to crackers.
Anyway, there was a lot of Parmesan cheese left, and one of the things Alton Brown did was shred it, then bake it at 375 for ten minutes to get crisps. I’d never done that before, so right when I got home, I got to work.
I was chatting on the phone with Beth while I grated the cheese, so I got a little carried away:
The crisps came out great. Alton put some paprika on some of them and some black pepper on others. I might try that next time. Or maybe smoked paprika. Mmm… smoky flavor…

I think the low-carb people know. When Kathryn was visiting ages and ages ago, she put a piece of American cheese in the microwave for a little bit. It came out crunchy, but not nearly as lovely as those.
Also, oyster crackers are the bomb! You have to bite them along the seam to get two perfect halves. Mmmmmmm…… Sometimes at school we have a ranch-dressing-mix-and-butter concoction all over them and I can’t stop eating them.

I LOVE COOKED cheese!!! One of these days I’m just going to make balls of cheddar cheese like cookies and just bake them!! MMMMM
