I hardly ever cook for myself, but Sunday nights seem to be the one night I take time to make something that doesn’t come out of a box or can. I think it’s because I’ve been grading all day and I’m still in “work mode”.
Last night I made tacos. I mean, not very complicated, but still… it was more work than Kraft macaroni and cheese.

Sunday is my cooking day, too. I have wanted to make roast vegetables for forever, so I finally made some. The problem was, I didn’t have any appropriate meat to have with them, so the entree was spaghetti. Weird, but it was ok.
What a lovely looking taco! Good for you! I’ve tried to start “taco Tuesdays” for us but we seem to eat them on Wednesday or not at all? Tonight we’re having clam chowder?….. that i made…. and i must say…. it would win a contest! If i could post a pic i would, oh and i made red lobster biscuits too! They come from a box (ha) but oh my goodness they’re good!
