Experimental Salads

I’ve kind of gotten on a salad-inventing kick. It started when I copied the Fandango salad from Panera Bread. It’s pretty easy once you find a store-bought raspberry vinaigrette. It’s just greens, mandarin oranges, walnuts, and gorgonzola cheese. When I make it for my church dinner groups, they think I’m a genius or something.

The last dinner group I went to, I tried something different: spinach, strawberries, toasted almond slices, and orange-poppyseed dressing. It was pretty good! Since then, I’ve been trying all kinds of combinations. Some of them have been pretty gross. My latest was pretty good, though. I used a dressing I assembled myself! It was rice wine vinegar, a little oil, ground ginger, and garlic salt. If I did it again, I’d add some soy sauce. I put water chestnuts and mandarin oranges in some spinach, then put in some chicken breast pieces and toasted sesame seeds. I think I may try this one again.

Not bad... for Brad.

In the interest of honesty, I should say I don’t eat healthy stuff every night. The night before I had this salad for dinner, my dinner was two bowls of Crunch Berries and some salted peanuts. The night before that I had half a pizza from Zorbas across the street. Grape Nuts before that, and… well, you get the picture.

    AHA! The cat is out of the bag (as it were). I, for one, always suspected it was more than cereal and Carnation Instant Breakfast for you. We, and by we I mean us, are going to expect to see some of these mad cullinary skill upon your next visit to Seward.

      I should save the recipe for one of the gross salads. I sometimes laugh while I’m eating them because I can’t believe how bad they are. I mean seriously, how can you wreck a salad?

    I want to see a list of these recipes – ingredients included! Give them awesome names, too! (Remember, though that ‘Brood of Angry Vipers’ is taken.)

    Brad–This salad is beauuuuutiful!!! You would have to pay big bucks in a restaurant for a salad of this quality (if it truly does taste as good as it looks). Oh & cereal, peanuts, & grape nuts(eww, grape nuts) are not unhealthy; just different; and by different, I mean weird, odd,– abnormal! Is that a healthy drink you’re having with your salad?

      Yay! You wrote in bold and italics! Yes, it is a healthy drink. It is Apollonaris water. I like it because it is fizzy and has a slightly higher sodium content than other bottled waters, so it has a slight edge to it. I don’t get it very often, but I decided to splurge last time I was at the grocery store.
