Summer Salad

Yesterday my church choir had our end-of-season party. It was fun. We all signed up to say what we would bring. I said I would bring a green salad. I had just been to Panera Bread and had their “Summer Salad”. It was quite tasty. I decided to try to reproduce it for the party.

It was Romaine lettuce, lemon poppyseed dressing, pecans, blueberries, strawberries, pineapple, and mandarin oranges. Sweet and crunchy and fresh. But when I went to the grocery store, I couldn’t find lemon poppyseed dressing. The only poppyseed dressing they had was creamy and oniony. It worked okay, but didn’t taste as sweet and fresh as the Panera salad. Perhaps next time I’ll make the dressing from scratch. Or perhaps I’ll just never make this salad again.

The dressing bottle has a strawberry on it, so it must have been okay to use.

    Lloyd and I ate at Breada in Lincoln (kind of a Panera knock-off), and each had a Delicious Salad. We thought of you! This summer has to be a Delicious Salad Summer.
