Toasted Cheese

It snowed a little Friday night into Saturday morning. Then there was some freezing rain. It was the perfect excuse to do nothing yesterday. A couple of times I considered doing some productive thing around the house, but I rejected the idea each time.

But I did decide to break into my raffle winnings and eat some cheese. Mmm… cheese… The basket contained Jarlsberg and Beemster X-O. They are both delicious. Jarlsberg is soft and mild and sweet and fresh-tasting. Beemster X-O is hard and intense and full of flavor. After sampling them, it was decided: I would put them on pieces of bread and bake until the bread was crispy and the cheese was bubbly. I buttered the bread, chopped up a clove of garlic (from my garden!), and arranged mixed pieces of cheese on the bread. It took longer to bake than I expected. I was thinking five minutes. It was more like twenty.

It tasted so good. I may actually do it again.
The darker-colored cheese is the Beemster.

    Mmmmmm….. looks delicious. I’m eating English muffin toast right now and I’m thinking it could use some melted cheese. Is the garlic underneath the cheese?

    This reminds me of a conversation I had with a co-worker a long time ago. She was making grilled cheese and her husband said she was doing it wrong. He would toast two pieces of bread and put a piece of cheese between them while they were still warm. She laughed and told him he had made a toasted cheese sandwich. I had never heard of that before, but now you have mentioned toasted cheese as well. Hmmm… further research required.

      If my husband makes himself grilled cheese, that’s how he always makes it….to this day.

      But the secret to making grilled cheese by toasting bread & adding 2 pieces of cheese is to smash the sandwich with your hand once assembled. It apparently creates the illusion of a regular grilled cheese sandwich.

      Your creations look good Brad! Except for the cheese.

      I love that movie. It’s my favorite of the romantic comedy genre. It’s the OCD that lures me.
