Yesterday we had a staff luncheon. It was delicious! The offerings were almost entirely salads… potato salad, fruit salad, turkey salad, egg salad, shrimp salad, lettuce salad… Mmm…
I tasted everything but the shrimp salad. I really like shrimp, but don’t really like shrimp salad.
There were cookies for dessert. I love cookies. I took a sugar cookie and a chocolate cookie, but when I took a bite, I got a surprise:
Delicious!
The cookies were stuffed with tasty fillings! Almond cookies with raspberry filling. Chocolate cookies with coconut filling. Chocolate chip cookies with a fudge filling. Chocolate cookies with peanut butter filling.
I ate one of each. 🙂

Our Mission BBQ lunch is scheduled for today, annual Campus Cleanup Day (94 degrees expected, of course…). Hope nobody (read “not me”) gets heat stroke out there.
What a feast! At least they didn’t have a cookie stuffed with shrimp salad. That would have put a damper on a perfect luncheon.
Hehe…..the only thing worse than that would be to bite into a cookie to find it’s stuffed with cheese. 🙁
But I could really go for a chocolate cookie stuffed with fudge right now.
