There was a bottle of vanilla extract in the teachers’ lunch room that someone had left there from a food class last year. I’m kind of a fan of flavored coffee, so I thought I’d do some experimenting. Knowing that vanilla extract is strong, I first tried only a capful. It wasn’t enough. I didn’t taste anything. Next, I added about a teaspoon. Still nothing. More than a tablespoon. Nothing. All I was tasting was coffee.
I tried the vanilla straight. Whew! It’s like liqueur. But I loved exhaling after taking a sip of extract. The vanilla scent went out through my nose. It was a delicious smell. I don’t think I’ll be drinking much vanilla extract in the future though. It seems improper to be drinking alcohol at school, and if I wanted to drink liquor, there are options much cheaper than vanilla extract.
Conclusion:
No reasonable amount of extract changes the way my coffee tastes at school. Drinking extract straight is tasty, but expensive, and possibly job-ending.

I think you were just using inferior vanilla extract. I put vanilla in my tea every cup…and it just takes a splash…
But I use Watkins Double-Strength vanilla. It comes in a giant (11oz) bottle. Excellent.
The other thing you might try is a little sugar or sweetener. Vanilla is very bitter, as is coffee. I believe something sweet would help bring out the vanilla flavor.
