I had dinner at IKEA yesterday. It is a wonderfully filling and inexpensive meal. I had the meatball entree as usual, but there was a food special being advertised that I really wanted to taste: squash and apple soup. I was half expecting it to be cold, but it wasn’t. It was warm. That was fine with me, because I haven’t had cold soup very often and wasn’t sure how I’d like it.
The soup tasted like Fall. Suddenly it felt like the leaves were turning, it was crisp and cool outside, and Thanksgiving turkey was in the oven. Mmm… Fall tasted good.
I felt so good, I bought a new soap dish. Well played, IKEA. Well played.

My preschoolers are trying a new vegetable each week, and this week is squash. Should I try to make soup, or go with the ‘slightly undercooked with lots of salt’ method that has been pretty successful so far? Hmmmmm…
We eat our squash with lots of honey. It’s a hit every time.
And I’m very sad about the lingonberry juice being gone from the fountain machine…

We cook our squash down and then mix brown sugar with it. Very sweet and much tastier to the palate.

Was the soup chunky with squash & apples or a thick puree? Crisp & cool outside….ahhhhh!

The soup was something in between. It was mostly smooth with just a few chunks. I think I would have preferred a smooth puree, but the flavor more than made up for the consistency.
Brad we miss you! Perhaps I am feeling nostalgic or maybe it was you reminding me how great ikea is but I wish I could go back and hang out again… It’s alot noisier inour house now but we could have you over after the kids went to Ed or meet up on a Saturday at home depot… Miss those days…

Just yesterday I was using my reciprocating saw near some electrical wires and thought of you cutting an iron pipe in my living room ceiling and throwing sparks when you hit a wire. It was a wonder you weren’t electrocuted. …Good times.
